Pumpkin Spice Oatmeal

I can't say that it's officially cold down here in deep South Texas but some days we get down in the low 80's and for us South Texans that means there is hope for some Fall weather. Or sometimes we just like to turn down the temperature of the AC and enjoy something warm for breakfast :) So to begin moving into the Fall season I made this yummy Pumpkin Spice Oatmeal.

My mother in law has oatmeal every morning. Seriously, religiously, every morning. She says it's good for her cholesterol. But she calls it "Mosh." So the foundation for this Pumpkin Spice version is from my mother in laws "Mosh." I'm just adding a touch of Fall.

There is no other reason for the way I make this, other than i't's just the way she taught me and it works well for us, and the kids LOVE it!


The Ingredients:



1 Cup Instant Oatmeal
1 Cup Almond Milk (mother in law uses 2 % milk)



1 Stick Cinnamon
1 Tbsp. Pumpkin Spice
1 Tbsp. ground Cinnamon


1 tspn Vanilla
1/2 cup Pure Pumpkin


For Toppings:
Frozen Strawberries
Frozen Blueberries
(you could also use fresh)
and Walnuts



First, in a large cup or container, soak oatmeal in almond milk.


Next, add about 1 cup of water to a medium size pot and add cinnamon stick and bring to a full boil. When it begins to boil, discard the cinnamon stick.


Add soaked oatmeal carefully and lower heat to medium low. 


Keep a close eye on it because it could boil over and get real messy.....
On very low heat bring oatmeal to a boil again until it rises.
Give it a little stir.


Add pumpkin, vanilla, pumpkin spice and ground cinnamon.
You could also add some sugar to taste. I omit the sugar because I like it just like this :)
Stir and bring to a simmer.


Add toppings and Enjoy!

  3. I never thought to add pumpkin to oatmeal. It's always brown sugar and cinnamon or blueberries. I like the pumpkin idea.
