Fish Tacos

This recipe is definitely a family favorite. I probably should have posted this sometime in the summer because it's a summery dish because of its fresh ingredients. But around our house we can have these anytime. My sister Sara requests fish tacos every year for her birthday, she absolutely loves them. We have lived in South Texas for about 10 years. Before this we lived in Southern California. So when we mention Fish Tacos to anyone around here we get this bewildered look like, "yuk! you don't put fish in a taco!" But let me tell you, YES! YOU DO! They are crispy, fresh and oh so amazing :) So without further discussion let me introduce you to our family's fish tacos.....


Oh my! words cannot describe how yummy these tacos are!
But this picture gives you an idea.


Ingredients:
2 to 3 lbs Tilapia Fillets
Your favorite fish fry breading (I used Zatarain's Seasoned Fish Fri)
Corn Tortillas
Vegetable Oil

For toppings:
Purple and Green Cabbage
Crema Mexicana
Limes

For Salsa:
3 Tomatoes
1 Jalapeno
Onion
Cilantro
Lime
Salt


For the salsa I put tomatoes, jalapeno, and some onion on a foil covered baking sheet in the broiler for about 5 minutes or until the tomatoes look a little wrinkled and outer skin looks nice and toasty. Don't put the cilantro I just added it afterwards to show what all goes in the blender. I also added a garlic in there but then later omitted it because my prince charming isn't fond of garlic in his salsa.


Remove stems from tomatoes and then just dump everything in the blender. Add a little salt to taste and squeeze a little lime in there. And pulse two or three times.


This little salsa makes my hubby very happy! He comes around with some chips every time and does the taste test for me :)


Chop up your cabbage. And your toppings are ready.


Give your tilapia a little rinse and dry and then cover both sides with some fish fry.


Then you're ready to fry!!!


Pour vegetable oil into pan. (enough to cover the sides of fillet but not fully cover)
Heat oil on medium to high heat.
When your oil is ready carefully add your tilapia.
Let it fry for about 2 minutes.


Carefully give it a little flip and let the other side fry for about 2 minutes or until nice and crispy.


Put your fried fish on a paper towel lined plate. 
Now you can warm up your tortillas and add your fish and toppings!!
