Minion Cakepop Tutorial Step by Step!!
Right now I love everything Minions! They are just the cutest little villains. They make being bad adorable. I was so excited about the release of the movie last weekend! Honestly, my excitement exceeded that of my 7 year old and I must say, I have no shame in that. I was so excited that I thought it would be a great idea to make some Minion Cakepops to celebrate :) And because they turned out so darn cute I wanted to share a step by step so that everyone else could share in my enthusiasm.

The Little Things That Make It All Count
I'm so tired. I'm so tired of mopping, dusting, folding, scrubbing, cooking, driving, teaching to drive, revising homework, essays, college applications......At the end of the day, that's all I can say. "I'm so tired." At times when the 4 kids and 1 husband leave at 6:55 a.m. every morning I sit on my old little brown couch that embraces my already tired body as I wonder, "how did I get here?" or "will I ever get a break?"

Hearty Beef Stew
This stew is kid and hubby approved. When the aroma of this recipe begins to fill the house there are smiles of satisfaction everywhere. I don't cook beef often because I am a somewhat frugal grocery shopper but when the prices at my local market go down on the chuck roast I go for it! I love this stew because I add a lot of big chunks of carrots and potatoes that makes it hearty and oh so delicious. We like our stew with a big ol serving of Mexican rice and let me tell you, it is a crowd pleaser around here.
The meat for this stew comes out really tender. The only downside is that you have to wait and cook it on low heat to get it to come out nice and tender. But we all know that good things come to those who wait, right.....

Pumpkin Spice Oatmeal
I can't say that it's officially cold down here in deep South Texas but some days we get down in the low 80's and for us South Texans that means there is hope for some Fall weather. Or sometimes we just like to turn down the temperature of the AC and enjoy something warm for breakfast :) So to begin moving into the Fall season I made this yummy Pumpkin Spice Oatmeal.
My mother in law has oatmeal every morning. Seriously, religiously, every morning. She says it's good for her cholesterol. But she calls it "Mosh." So the foundation for this Pumpkin Spice version is from my mother in laws "Mosh." I'm just adding a touch of Fall.
There is no other reason for the way I make this, other than i't's just the way she taught me and it works well for us, and the kids LOVE it!

Linguini with Spicy Poblano Sauce!!
This dish is so simple but so yummy and filling!! I think my prince charming could have it every week without complaint if I made it every week. He likes anything spicy. Although, to his disappointment, I can't make this dish as spicy as I would like because of my little Lydia. She can take a little spice but not as much as her daddy does. This little pasta dish could be a side but it's so darn delicious it's just fine all by itself.
Here's Everything you need:
4 Beautiful Poblano Peppers
2-4 Serrano Chilies (I only ended up using one)
2 Garlic Cloves
1 Tablespoon of Knorr (Chicken Flavor Bouillon)
