Pumpkin Spice Oatmeal

I can't say that it's officially cold down here in deep South Texas but some days we get down in the low 80's and for us South Texans that means there is hope for some Fall weather. Or sometimes we just like to turn down the temperature of the AC and enjoy something warm for breakfast :) So to begin moving into the Fall season I made this yummy Pumpkin Spice Oatmeal.

My mother in law has oatmeal every morning. Seriously, religiously, every morning. She says it's good for her cholesterol. But she calls it "Mosh." So the foundation for this Pumpkin Spice version is from my mother in laws "Mosh." I'm just adding a touch of Fall.

There is no other reason for the way I make this, other than i't's just the way she taught me and it works well for us, and the kids LOVE it!

Linguini with Spicy Poblano Sauce!!

This dish is so simple but so yummy and filling!! I think my prince charming could have it every week without complaint if I made it every week. He likes anything spicy. Although, to his disappointment, I can't make this dish as spicy as I would like because of my little Lydia. She can take a little spice but not as much as her daddy does. This little pasta dish could be a side but it's so darn delicious it's just fine all by itself.

Here's Everything you need:
4 Beautiful Poblano Peppers

2-4 Serrano Chilies (I only ended up using one)
2 Garlic Cloves
1 Tablespoon of Knorr (Chicken Flavor Bouillon)

Pork in Green Salsa

I simply love this dish. It is so delicious and savory with just a little spice. When I have time I make it with some fresh Homemade Flour Tortillas so that I can scoop up any left over sauce left on my plate.

2 lbs. Pork Butt Roast
1 lb. Tomatillos
2 Bay Leaf
2 Anaheim Peppers
1/2 Medium Onion
1/2 tsp Dried Oregano
2-3 Garlic Cloves
1 Cup Water
Salt and Pepper
Vegetable Oil

Fall Wreath - Hobby Lobby Knock Off!

This post is taking Nuestro Buen Provecho in a new direction!! I'm so excited because my forte is in the kitchen I'm not very crafty. DIYs and crafts are not really my thing. But I was browsing through Hobby Lobby a few weeks ago just doing some wishful shopping, (just looking, no buying) and I saw this oh so cute wreath that was on display. To my dismay it was a whopping $160.00! Jaw drop! Of course there is no way in the world I could afford this on my budget, so I set out to make one myself for much cheaper.

Here is the Hobby Lobby Wreath.....

Nice Right?? But not $160.00 nice!
I understand after all the materials, and the time it takes to make it, of course it probably is worth about that much. But my door doesn't need such a big wreath and I thought I could make one that fit the size of my budget and the size of my door. 

Since it's fall Hobby Lobby has everything in their Fall section on sale for 40% off! Even those pretty red sunflowers. 

For my smaller scale wreath I bought the following items:

1 16in orange wire frame with pipe cleaners attatched
3 15ft rolls of burlap
1 15ft roll of burlap chevron ribbon
1 red sunflower
1 letter "C" unfinished wood cutout

I spent about $29.00 for all materials.
Everything was 40 % off except for the chevron ribbon, so I used a 40% off any regular priced item coupon for that. Also, the letter cutout was on sale for 30%. 

I want to say that I saw a few YouTube videos for burlap wreaths and there were not many that used this wire frame. Many use the ones without the pipe cleaners. I ended up using a method that I kind of came up with on my own.

Fish Tacos

This recipe is definitely a family favorite. I probably should have posted this sometime in the summer because it's a summery dish because of its fresh ingredients. But around our house we can have these anytime. My sister Sara requests fish tacos every year for her birthday, she absolutely loves them. We have lived in South Texas for about 10 years. Before this we lived in Southern California. So when we mention Fish Tacos to anyone around here we get this bewildered look like, "yuk! you don't put fish in a taco!" But let me tell you, YES! YOU DO! They are crispy, fresh and oh so amazing :) So without further discussion let me introduce you to our family's fish tacos.....

Homemade Flour Tortillas

It's been so long since my last post because of school, family and just life in general. I hope that I'll be able to be a little more consistent this time around but, no promises :).....Well today I'm posting a recipe that is very special to me. It's special because I've always dreamt of making my own homemade tortillas. Some people dream about traveling or skydiving. Not me, I dream of homemade tortillas :) Anyone else out there understand where I'm coming from????

Anyhow, it takes a little practice and I'm sure that there are some expert "tortilleras" out there but I'm a beginner. Although I must say that after several attempts my family was very happy with the end result. That's what really matters after all. If my fantastic 5 gives me the thumbs up, I'm happy.

Well, this first picture is of my mom and her friend having a blast making tortillas. My mom is the one holding up the tortilla. Beautiful smile, right?? She was probably laughing at herself because she wasn't the best at tortilla making. She was however such a great partner in the kitchen. She was the one who would wash the dishes and big bowls that were in the way. She would slice, dice, peal, sauté....whatever needed to be done, she was the one you could always count on. If there was nothing for her to do she'd sit at the counter and tell stories about her apa (daddy), her ama (mom), her sister Eliboria or brothers, Tudy, Manuel and Fidel. Her stories were always funny and our laughter was one that filled the kitchen..... How I miss her. I think she would be proud of the tortillas I made for this post.
